Buying Fresh Meat Online: What to Look for in Every Cut

Ordering meat online means giving up the usual checks, no picking it up, no smelling it at the counter, so it helps to know what actually separates good meat from average meat before you order, and what to check the moment it arrives.
Colour is the fastest signal, and it's different for each type. Fresh chicken should look pale pink, not grey or yellowish. Fresh beef should be a deep red, since it's the cut's exposure to oxygen that gives it that colour, a brownish tinge isn't automatically bad, but it usually means it's a little older. Mutton sits somewhere in between: a rich, slightly darker red with white, not yellow, fat.
Texture matters as much as colour. Good meat should feel firm and slightly springy when you press it gently, it should bounce back, not stay dented. Meat that feels sticky, slimy or unusually soft has usually been sitting too long, and that's true no matter how fresh the packaging looks.
Fat tells its own story. On chicken, look for fat that's pale and firm rather than yellow. On beef and mutton, a moderate, even marbling of white fat running through the meat usually means better flavour and a more tender result once cooked, completely lean cuts can actually turn out drier.
Smell is the last check, and the most important one. Fresh meat should smell mild, almost neutral. Any strong, sour or ammonia-like smell means it should go straight back, no exceptions, that's not something cooking fixes.
Since you can't do any of this before ordering, the packaging and handling before it reaches you matter more than usual. Meat should arrive well chilled, sealed, and separated from anything else in your order. Bought fresh and stored properly, in the coldest part of your fridge, used within a day or two, or frozen promptly if not good meat makes the difference between an average meal and a genuinely good one.
